Can you build a PC with everything but the graphics card?

Let me explain.

I know that I need one and why, but I was wondering if I could build everything else like a week in advance because I have every part but my gpu because of issues with shipping.

So should it work okay if I build everything else and wire hide beforehand so all I have to do when I get my gpu is plug in and boot.

You should be ok. That's why your motherboard has VGA/HDMI ports. It will run with the on-board graphics. When you installed your graphic card, make sure to plug your cables into the back of GPU as the motherboard ports will be disabled.
