Clone the 60 GB drive to the 128 GB drive.
Lots of tutorials etc. on the internet about drive cloning. And there are several free cloning tools available as well.
Google "drive cloning" and then narrow down the results as necessary with respect to your set up and options.
And you can find free software such as EaseUS ToDo. There are other similar products.

So I have a 60gb msata drive as my boot drive. However I wanted to upgrade it to 128gb msata, how would this be possible if I only have one msata slot on my motherboard. Would it be easier to get a sata one?

You need an adapter like this https://www.newegg.com/Product/Product.aspx?Item=9SIA2970ZN6383&cm_re=msata_adapter-_-9SIA2970ZN6383-_-Product plug the new msata SSD into it, and plug it into your PC, use the software like Ralston18 said to clone the OS into the new one, switch the SSD, reboot and done.
If you get the SSD, like Samsung brand, it will come with the cloning software. Othe ssd like intel, kingston, etc. they have the software too.
