So I just purchased a red braided 8 pin cord and it doesn't fit my gpu. could I switch the black plastic connector pieces so the red cord could fit my gpu power connection ?

Well, if you feel that you're up to the job, then yes you could switch the plugs. Obviously you need to connect the wires in the same order. On the 6+2 plug, the extra 2 wires are only ground wires and not needed for a 6 pin (and obviously the plug isn't required either for a 6 pin), so it's optional if you even put the plug on.

If your card does need an 8pin and that cable doesn't fit are you sure its an 8pin PCI-E cable and not a CPU EPS 12v cable?

You're going to need a cable labeled PCI-E for it to fit your card.

You can do that if you want, you will need to change both ends as the 2 cables use different pin layouts.
