This is going to be my first build. After a lot of research, this is the build I have landed on. I wanted to get any opinions or concerns from anyone willing to voice them. I am about to order everything but wanted to post this here first. The reason for the two SSD is for a raid 0 config.

Raid-0 is not what it seems.
Raid-0 has been over hyped as a performance enhancer.
Sequential benchmarks do look wonderful, but the real world does not seem to deliver the indicated performance benefits for most
desktop users. The reason is, that sequential benchmarks are coded for maximum overlapped I/O rates.
It depends on reading a stripe of data simultaneously from each raid-0 member, and that is rarely what we do.
The OS does mostly small random reads and writes, so raid-0 is of little use there.
There are some apps that will benefit. They are characterized by reading large files in a sequential overlapped manner.

honestly, why raid 0 for 2 SSDs unless you need all that speed, and no redundancy? It is not a good idea unless you need it. I mean raid 0 with 2 SSDsrecommend something less daunting for a first build. nice part research though, as you have picked some of the best parts out there. but the cooler is loud, and I mean it. I would make the following changes to your cooler and motherboard as the mobo can be cheaper if you want it to. if not that is fine, go with the original mobo.

I did have my doubts about raid. They are pretty fast without it already. Does the MoBo you suggested support the nvme ssd?

Spoiler... no benefit at all.

Do not plan on it.

I would use a single Samsung 960 evo m.2 1tb drive instead.
