Odd transfer speeds

Okay this might be odd to write a post about something working better then it should, but i can't come to terms of why this would happen.

PC specs
MB - Asrock Epc602
CPU - Xeon E5 2670 x2 (2 cpu system)
RAM - Samsung Reg Ecc 64 Gb 8x8
PSU - Seasonic Xp2
Main OS Driver SSD - Samsung 840 Evo 250Gb
HDD 1 - 3 TB 7200 RPM 64mg
HDD 2 - 2 TB 7200 RPM 64mg
HDD 3 - 500 GB 7200 ROM 64mg

My non issue, but odd thing is if i have a file on the 500 GB and transfer it to the 3 TB it transfers at 700MB or faster, how can this be?

This also happens with 2TB to 3TB

It starts out with 130MB then a massive jump to 700MB then sometimes 900MB and by the time (Most times) the file is already done. What am i missing here, how is 5gb or more moving between HDDs faster then they should?

Usually if you are transferring larger files you gain higher speeds, since its sequential read/write and stresses HDD less.
But 700mb transfer isn't possible on those HDD's.
Probably the file/files transferred are really small and till the tool calculates transfer speed the files are transferred, thus giving inaccurate speed.

Above pictures to better understand, this is going on.
One of the drives is a 7200 RPM 64Mb 2 TB Seagate about 4 years old (i think)
The other Driver is a 720 RPM 64 Mb 3 TB Seagate about 2 years old
