I can't seem to figure out how
to connect those three.
My mobo wants a 4-pin for the cpu, the CX500 has an 8-pin with CPU written on it.
The RX 480 wants an 8-pin cable, but the CX500 only offers 2 of those 6+2 cables and a few pairs of 4-pins where one of them has small holes and the other has big holes.

Solution
The 6+2 PCIe power connector goes to the RX480. The 8-pin CPU likely splits into 2 4-pin connectors, that is what connects to the motherboard, along with the larger 24-pin connector.

That's correct. To clarify even further - 8-pin CPU cable indeed splits into 2x4 pins, and you only need to connect a single 4 pin, leaving the other 4 unconnected if your mobo doesn't provide an 8-pin CPU connector. Only one of them will physically fit, because connectors are keyed (differently cut corners), so you cannot plug the wrong one in, nor connect the right one from the wrong angle.
