I am trying to get either 2 X 8 GB or 4 X 4 GB if I have to to fit this motherboard.
Either 1600 or 1333 speed

From posts and ASUS thenselves I gather this board is very finicky about the memory you use.

On the QVL list on Asus website there are relatively few listed especially in the 2 X 8 GB and almost all of it is out of stock at suppliers for Canada ( from what I see the list is obsolete as almost all of it has been supersceded by new models or revisions to the numbers. )

I would prefer the 2 X 8 in case I want to go to 32 GB later ( the board limit ).

Does anyone have any experience or advice to share on how to approach this problem?

Thanks in advance.

You really aren't going to gain much in terms of performance (if anything) going from 16GB to 32GB, so I wouldn't worry about that. If you want 16GB, just about any good (I prefer GSkill memory) quality PC1600 DDR3 memory will work.

Go to the various memory manufacturer sites(Corsair, GSkill,Kingston, Crucial, etc). they will have a memory configurator that willl show you what ram they make to fit your motherboard. I would recommend getting a 2x8GB kit. Getting 4 sticks of ram to work, even by the same manufacturer, is problematical at best.
