Mother Board Ram Support

When reading through the ram that my mother board support I was confused by ram. It appears that only two frequencies are support and the rest of over clocked speeds? Correct me if I am wrong but do I need to stick with only certain frequencies of ram? Do I need to look for ram that is the exact same frequency as listed in the specs? Example ram I was looking at.

Note: I am 7th generation.

7th Gen processors support DDR4 3800(OC)/ 3600(OC)/ 3200(OC)/ 3000(OC)/ 2800(OC)/ 2600(OC)/ 2400/ 2133

6th Gen processors support DDR4 3600(OC)/ 3200(OC)/ 3000(OC)/ 2800(OC)/ 2600(OC)/ 2400(OC)/ 2133

If so then what does the OC mean? I thought it meant over clock. Does this mean I can use any frequency in the list including the OC ones?
