Hey guys. First timer here. I'll try to outline my situation.

Back in 2014 I got a used HTC One M8 on amazon. I received the phone and it worked great, but I've begun encountering issues in performance dating a year and a half back. The phone was unlocked from AT&T and I use it in Mexico with my Mexican carrier, works fine. I've had to format the phone a few times since each time the performance gets a lot better and when it starts getting worse and struggling to open simple apps like Instagram I just do it again and voilá. The phone shows the AT&T screen during each boot-up and includes the bloatware every time I format it. I still have KitKat 4.4.2 since the software updates are done through AT&T and I've never been notified of a software update.

Now I'm looking into a manual update but I don't know how to do it or if I should go to lollipop or all the way to Marshmallow (or if there is something newer that I don't know of.) I found this neat instruction set from HTC on how to do a manual update on an AT&T phone if you're out of their coverage.

Now, I come to ask you, people of Tom's Hardware.

Should I follow what the page indicates, which seems pretty straight forward?
Should I update to Lollipop or Marshmallow?
How do I choose which one to update to?

go for MM update,it is pretty odd that m8 has issues. It is not its style to have issues even today. Also the page you provided says that updates your phone to android 6(Marshmallow).So get marshmallow it has doze which is a huge boost for your battery also.So yes do as the official htc page says.HTC m8 is a great phone even today.
