Help with First PC Build for Animation, Coding, and Gaming?

I'm trying to get a PC built within the next 2 months, kicking my old HP laptop off the desk.
I'm looking for something that can run the entire Adobe suite smoothly, along with Unreal Engine, Maya, and games on steam with acceptable fps.
If I could do both 2D Animation and 3D Animation, along with film editing and other creative outlets with ease, that would be ideal.
I'm also looking into dual monitor and something that can run with a Wacom Cintiq 27QHD, which I'm getting at a later date.
Another great plus would be something that I can stream off of pretty easily.
My budget is around $1000-$1500 with the monitor(s), case, mouse, and keyboard.
If someone could compare spending the money on two monitors rather than only one and increasing the power of the actual build, that would really help.
