Changing my Graphics card to an AMD Radeon RX 480

Solution
Should be fine, i'd say get the 470 rather than the 480 though to prevent any possible bottlenecks from your older i7. Also you will probably want to consider upgrading your PSU to a 500w EVGA Supernova G2/Corsair CX500M as they are much more reliable than your current.

Also make sure to measure your case and compare it to the dimensions of the GPU to ensure it actually fits in the case.

is it still possible to get 480 though and what does the 500w do, is it just power?

a 500w made by one of the brands i mentioned will provide much more stable power flow and reduce any risks of shorting etc. You could get an RX480 if you wanted too yes as long as it fits length/width wise in the case.

I think the 480 would do fine, pick one of the cards that's not longer than 10 inches just to be on the safe side. Your CPU is a few Generations old but has plenty of power for the 480. Power however, from your PSU might be an issue, make sure it has an 8 pin connector to put into your GPU, and the watt it makes is just on the low side ( something around 500 watts would be ideal).
