Normal SSD or M.2?

Simple question really. I'm building a new system and want to put some SSD power into it. Not for around $130 I can get a 500gb SSD, big enough for 1 or 2 games plus my OS. Or, for around $80 I can get a 275gb M.2 SSD and for around another $70 a 250gb.

I know M.2 is faster, but is it worth the extra $30 or so dollars to buy 2 different SSD's and (hopefully, if possible) run them as one? Even if not as one, is it still worth it? The M.2 as an OS driver (and putting one game on it) and then using the other SSD as extra storage? Or just get the 500gb version and call it a day?
