I'm not sure whether to go with a 1060, because I want to save a bit of money and also don't play at 1440p but is a 1070 better? And what 1060/1070 should i get? I was thinking about getting the ASUS GeForce GTX 1060 6GB ROG STRIX Gaming OC

If you only want to game at 1080p, then the GTX 1060 is ample- yes the 1070 is faster but I think it's rather overpriced at the moment. I can't recommend a specific model but if you are getting a GTX 1060 make sure to get the 6gb version- apart from the issue that 3gb vram could prove to be a...

I can't recommend a specific model but if you are getting a GTX 1060 make sure to get the 6gb version- apart from the issue that 3gb vram could prove to be a restriction in the near future the 3gb version is also quite a bit slower (despite sharing the same name it has less shader cores). The other option worth considering is the RX 480- it trades blows with the gtx 1060- which is faster depends on the game your playing. The RX 480 uses *slightly* more power, but not enough to really worry about, certainly if you were on a tight budgets the 4gb RX 480 (full gpu) is a better choice than the 3gb 1060. The 6gb 1060 and 8gb RX 480 are pretty much even on which I'd pick- depends really on the specific model / pricing imo (or if you have a strong preference for nVidia / AMD).

If you do want to look at a faster card, it might be worth waiting a little bit as AMD's Vega gpu line is due out soon and should be in a similar performance bracket to the 1070 / 1080 cards- which will likely shake the pricing up a bit . You could also look at the last gen R9 Fury and 980ti cards as they both offer similar performance to a 1070 and can be had quite cheaply these days (though both use more power your PSU could handle either without a problem).
