Hard Drive crashed- I have recovery questions! urgent!

I had a hard drive crash in my computer today and it is being recovered by a tech guy I know right now. My concern is that I have a couple of files that I deleted about 5 years ago that I don't want coming back up. I understand what happens to a file after it is "deleted"- the space becomes "available" and may or may not be overwritten. My questions are: will these files have been overwritten by now? It was a basic hard drive on a computer that was used a few times a day for the past 5 years since the files were deleted. Next, when a crashed hard drive is recovered, do deleted items come up automatically, or are those files something that has to be looked for on purpose to recover? Thanks so much!

If he uses any of the current file recovery tools, there is no setting of "Don't find things I don't want to look at"

It finds whatever can be found. Either all or part.
A video, from 5 years ago, is unlikely to be recovered in toto. The filename maybe, and maybe a fragment.
The whole video? Unlikely.

Will those 'files' reappear?
Maybe....

He does not care what is on it...he will look for and try to recover everything.
Now....once he finds something interesting...that will become part of the shop flash drive, to be drooled over by all.

Fortunately the files are not of me, they are videos of a friend who is now in a small government position and can't have things like this leaked. What is the likelihood that they have been overwritten by now, 7 years later? I was told by the guy recovering it that deleted things won't be recovered, only things that were visible on my computer when it crashed but I'm skeptical. Do I trust that or will these things come up?
