The NUC has an i3-7100u in it. You can get a laptop with the same CPU, have all the same features, and have it be a portable machine with an OS, battery, screen, touchpad, speakers, and keyboard all in one.

NUCs are not very good for gaming, especially because they use integrated graphics, which are weak. Furthermore, the NUCs you have listed use lower-end and lower-power processors, meaning that their processing ability is less than capable of running any moderately intense games.

That being said, I would recommend getting the first one you listed. It boasts a stronger processor that will make day-to-day use faster and allow you to run some games.

Don't forget that NUCs are barebones systems, which means that you have to buy your own RAM and storage. To make your NUC run faster, I recommend at least 8GBs of RAM (DDR4 and non-ECC) and an SSD.

I like a little longevity in my devices. Nothing wrong with an i3-7100u it is a decent ultrabook processor. But I would almost go ahead and get the laptop. And then I lean towards the big MQ and HQ processors when I shop for mobile parts.

If space is your biggest concern, you could get more performance out of an SFF or USFF form factor computer and barely double the size.

You have to understand CPUs have hierachies. A Celeron is the lowest-power CPU available: multiple features are disabled. An i3-7100U will have more processing power than a quad-core Celeron.
