x99 vs z270

I am planning to build a system for gaming and work which includes graphic/video editing at university year 2 and I am stuck between choosing:
- an intel i7-6850k with the asus x99 deluxe/u3.1 (or asus ROG Rampage V extreme U3.1) OR
- an intel i7-7700k with the asus ROG maximus ix formula OR
- wait for the enthusiast 7th gen i7 processors and mobos. BTW would the 6850k equivalent 7 gen CPU cost around $600 or would it rocket to a $1000

I know the x99 motherboards would have more PCIe lanes and makes overclocking easier with better monitoring of the system stats, but the z270 is more 'future proof' with support for intel optane and DDR4 4200ghz RAM.
Please help me choose which CPU I should get (i.e. is it worth paying double for just 2 extra cores and reduced clock speed) and if the 6850k, then which motherboard should I get out of the two I have given?

P.S. I probably will use this system for 4-8 years with a gtx 1080 (which I may replace in 2-5 years) with a corsair h100i v2 water cooling AIO and I do not think I will upgrade to custom water cooling any time soon so major OC are not possible

x99 is for workstation use where you need every core/thread you can get your hands on.
z270 is for gaming and hobby level editing.

If video editing is for professional/business use then go x99.
If you can accept slower rendering times then go with z270
