I'll do you one better.
You can go with 16GB RAM, but right now, it's not necessary for gaming, if 8GB is not enough an RX480/1060 isn't enough too.
7500, because it has higher clocks.
ASRock, because I like ASRock more, there's really not a big difference between these two boards, except one more M.2 slot on the ASRock.
