What's the fastest memroy I can use in this motherboard without overclocking it?

Well the only way to get anything higher than 2400MHz when it comes to ram is to overclock it. If you buy a pair of 3000 MHz ram it'll be 2400 MHz out of the box and you'll have to overclock it to 3000 MHz and it'll be fine, you wont be pushing it what so ever that's what it's designed for.

So really you don't have an option unless you overclock the ram. Is there any reason why you wont overclock? Its not bad for it unless you push it way too far
Well, the default RAM speed for Kaby Lake is 2400, so that would be your starting point.
But since that board supports much faster RAM, you could get anything faster. Just be sure to select the correct XMP profile to have the RAM speed set correctly.
