https://www.ekwb.com/configurator/ in my experience, OC graphic cards may useful on GPU intensive workloads such as 3D rendering, the benefit in real world gaming would be higher FPS or maximum image quality setting, the down side is we force graphic card to use top power draw, = hotter = fastening life span expectation, the quicker part to be dead is GPU's fans, so water cooling is obvious choice at least two or three years later.

I recommend EKWB GPU waterblock over alphacool, watercool, aquacomputer, koolance etc etc base on the fact EKWB has (almost) complete full cover waterblock for various GTX 1080 variant.

Hybrid
If yours is Founders Edition then yes you can use CPU water block...

depending on the spacing and rest of the case, id just try them out normally with the gigabyte coolers first. if you plan to overclock them or if you have cooling issues then i would look into water cooling .
a side panel fan aimed at the GPU's might help to push fresh air into them

I ran SLI OCd cards fine. As long as you have a mobo with the 4 PCI-e slots and you can keep a space inbetween the 2 you should be fine. Only way i can see it being an issue is if they are right on top of the other with no space inbetween.

Granted, you should most definitely check temps when you start running stuff, but I doubt you will see any issues.

If you do end up having heating problems, I prefer putting a fan facing up next to the PSU, and then a fan that is facing towards inbetween the GPUS from the harddrive cage. With the gigabyte cards usually it's the bottom card that gets melted because those fans just throw so much heat out of the bottom, but with a little bit of space inbetween it will be fine.

If it has the blower type fan you're pretty much safe no matter what but if they're windforce fans or something similar you're still fine as long as you have a little space between them. Tri-Sli was the only time I ever had an issue with space inbetween cards, and even then you can generally get away with it by removing a back plate or something along those lines.
