I've been streaming on Twitch and doing youtube videos and I love doing it...and I've always been an avid gamer. Im finally building a gaming rig and I was wondering what you all thought. :)

Lovely build if you are able to afford it. You have chosen good parts and I feel like this PC will be a very good gaming rig. If I were to change anything it would probably be the CPU, I would get an i7-6700k instead of a non k to be able to overclock it but if you were to do this then you would have to buy a CPU cooler which would be more expensive for you overall. I don't know why you are buying a capture card since you have recording many recording software such as OBS, Fraps, Action, etc. but it's not for me to judge.
