upgrade opinions please? 7700k vs 6850k and more

so after many years, its time for an upgrade from my 2500k rig. i'd love to hear your opinions and suggestions, the more the merrier

case: rosewill blackhawk ultra (love its features and size)

cpu: 7700k with ASRock Z270 GAMING , or an i7 6850 with i have no idea what board? i like the idea of extra PCIE lanes and cores

8 or 16gb of ram, i can figure out that much on my own

probably a gtx1080

i desperately need suggestions for a premium quality PSU, 750-850w (overkill i know), platinum or titanium ratings

my overall budget is $2000usd but flexible, for case psu mobo ram optical drive...just the box, no monitor OS etc. i order solely from newegg.com

help?? almost exclusively used for gaming/basic 1080p media viewing.

also, suggestions for a really nice monitor? 1440p or something, i dunno

i need all the SATA ports on this asrock mobo, and i pretty much need atleast the SATA dock on the top of that Rosewill case sooo...i have the following:

i have storage drives that will be carried to this new rig from the old, but i need a couple 4 or 6tb sata6 7200rpm drives. suggestions? WD black 6tb?

suggestions for pretty good 1440p monitors? lots of gaming, movies, and reading text
