Help me, I'm going crazy... I don't know what to build anymore.

Someone once said that the computer building world is quite easy... well I'm here about to have a mental breakdown. I've seriously tried hard to learn as much as I can and get to grips with what I'm doing. Despite being a PC gamer most of my life, I knew very little before I wanted to build my own. I just let dad or the sales guy tell me what to buy.
I've spent ages looking at everything and not hesitating to ask some of the most stupid questions on here which most of you have been amazing and helped me a great deal... the only thing is I keep getting a million people suggesting I go for this and that. If you're getting that, better go for this. Blah blah anyway I'm rambling. Basically, a week ago, I thought I had a set build and was hyped to build it but I double checked a couple of things and found that a) I still wasn't sure what CPU to get for gaming and b) if I got a better one, I'd need to upgrade pretty much everything in my build (cooling, motherboard etc) and it all comes at a cost. Those little ' invest an extra £30 for a slightly better one, it will be worth in the long run' all adds up and has now made me uncomfortable with the price.
Please help me. All I want is a good computer to last a few years. I don't need all the latest stuff that will last. I hope to be making enough money some day that I can buy a brand spanking new, all kitted out computer without having to worry about budget. All I want right now is something that will play latest games at highest graphics without any problems. I'm using a 1080p monitor and tbh I'm going to stick to that for now. I can't even be bothered to go through the palaver of upgrading and stuff. I would like to play games such as Overwatch, Total Warhammer, maybe even things like Witcher 3 and Batlefield 1 if I purchase them in the future. My budget is preferably around £1000-£1200/£1300 and I like the idea of GTX 1070 but again... please just help me. I'm getting so stressed and confused by everything and this was supposed to be fun.

TL;DR - I'm so confused about trying to build a computer. Please advise me on good parts for a gaming computer. If you recommend one solid full build, I'll love you. Choices make me panic.

Sorry I know I type a lot of unnecessary stuff but thanks for those tips!

Even if I get a 144Hz monitor, is GTX 1060 still good enough?
