I have this motherboard on order (ASUS TUF Z270 MK1), the spec sheet shows "NVMe Boot (via M.2 PCIe Slot)", I was going to get this M.2 drive (WD 1TB Blue M.2), but I've just seen that it has no mention of NVMe on its spec sheet.

So, what is NVMe and because it's a new build would I be better off finding a drive that does have NVMe?

NVMe is a signalling protocol, just like SATA is.
The drive that you are wanting to get is a SATA M.2 drive.
Your board does support it, but I would suggest getting the NVMe version of that SDD. You will get better performance from it than what the SATA version can get you. Unfortunately, WD don't make a NVMe version in 1TB yet, so perhaps try something like this one: https://www.scan.co.uk/products/1tb-samsung-pm961-polaris-m2-(22x80)-pcie-30-(x4)-nvme-ssd-read-3000mb-s-write-1150mb-s-360k-280k-io
It has two M.2 slots. One slots supports PCIE mode and SATA mode. The other is PCIE only mode. In other words one slot only supports NVMe the other supports both. So you should be good to go with the WD 1TB Blue.

NVMe drives are generally much faster. So if you can afford it and are willing to spend the money. I certainly would go with an NVMe model.
