Future proof build (4 years)

Should i buy a gtx 1070 and i5 7500
Or
Should i buy gtx 1060 and i7 7700
I want this setup to run all titles at ultra setting for atleast 4 years.
Which one should i go with Better Gpu and lower Cpu or Better Cpu And Lower Gpu?

Look nothing is future proof. Who knows the future of PC games in next 4 years. Its better to have a mid range build then after 3 years upgrade it to mid range again and so on unless you have an ultimate budget. Now a days if you want to play on ultra graphics go for 7700k and 1080Ti.

How about 1080ti and any Ci5 6th or 7th gen?

None of these GPUs wd be enough after 2 years on high settings, let alone Ultra.

Case in point, my GTX 970 isnt enough for ultra at 1080p anymore which is almost same as GTX 1060...

Manufacturer's don't/can't make future-proof hardware, certainly not for a 4 years timeline. How the blazes do you expect them to know what's waiting just round the corner from other hardware manufacturer's & game developers?

Plus, it would be unprofitable for them to make future-proof hardware even if they could.

I'd go 7700k and 1060, if those were my ONLY two options between that and 7600k/1070.

As others have said, the processor will be relevant longer than either video card you mentioned.

If I wanted future proof for 4 years without upgrading I'd probably go for 7700k/1080Ti. Although I'm sure the 1080Ti will not be able to do ultra for the next 4 years, but probably pretty close if we're talking 1080p/60 fps
