Dual 60hz VS Single 120/144hz?

Okay, so, I'm debating between getting a dual 60hz Monitor setup or a single 120hz monitor (might be able to get a 144hz).

I game often, and occasionally stream, but I also work on video editing, programming etc. The dual 60hz would be perfect for productivity, but the 120/144hz would be so much smoother for normal use and in gaming.

I mainly play H1Z1, CS:GO, GTA V and The Witcher 3.

What would be the best decision to make?

That depends on screen size... For example for Visual Studio I prefer my home setup 1x 27" 2560x1440 rather than 2x 24" 1920x1080 I have at work... As for > 60Hz, you need to try yourself. Many pple claim it's the best thing ever, many cannot tell a difference between 60 and 120 with a decent screen that doesn't have flickering backlight.
For video editing you'll be wanting screen with resolution one level higher than the target video (so if you work with 1080p, you should get 1440p screen for non-resized video image + controls).
I'd say if the screen size is 27" or higher, you can live with one comfortably for both use cases, otherwise for 24" or less It'd be better for you to take dual screen.
Also you have an option of taking one...

You wont be able to run games on 2x1080p monitors smoothly and at decent framerate with a single gtx 1060.

Get a single 120hz monitor, or get 2 monitors and just play games at one
