Regardless of what CPU you get, the 3gb 1060 is not designed for that. It's a 1080p 60fps card. You'll need a 1070 to do what you want(1080p at high fps) with modern games.

You might need to lower expectations. If you want to run >100 fps in modern games CPU strength is equally important to gpu. For 1080p 144Hz I would not go no lower than a 7600k & GTX1070 but even this will dip under 100 in heavy cpu games, a 7700k does show material benefits in some modern games when going for high fps. It not average fps that matters but minimum.

Well you would want a 144Hz monitor with 7700k and anything from a 1070 up to 1080Ti depending on budget and if high settings are ok or you want everything maxed out in the latest games. The 1080Ti is a little overkill but gives headroom for future games.

The i5 6500 is great for modern gaming but high fps gaming benefits from both higher single core strength (overclocking) and extra threads (i7). Your aiming for a high performance gaming setup, your setup will only perform as well as the weakest part.
