The leftmost setting is your output volume. The remaining settings are sources of sound. You can't make source having higher volume then output. If you wish capture server sounds louder then other sounds, you have to set left slider and Nvidia slider both to the level you want, then reduce remaining sliders. There's no other way to do that.
