is this a little to much for gaming and streaming?

You should know that AMD just released Ryzen cpu, which comparable with i7-6850 for much cheaper price. Not to mention cheaper in motherboard also.
Assuming you are high end buyer, I would use the highest Ryzen and high (not highest but good enough) spec. Here is the US price:

Depends on your resolution. If you're at 1080p, it's a bit overkill.

The marginal gains for streaming on a 6850k/LGA2011 rather than a 6700k don't strike me as worth the additional cost, unless you do significant non-gaming things that require some heavy-duty processing.

Yeah it uses standard casing, as I didn't know what your taste like. If you going high end, don't forget samsung 960 evo/pro as it has more than 2x standard SSD speed.
Ram is only 16Gb, but its plenty for gaming. I never see my pc go over 8Gb.
PSU using 850W seasonic bronze. Its not 1000W and gold, but it should have no problem when you SLi 2 gpu. For 1 gpu, it is very (a bit too much) plenty.

This ryzen is current best amd cpu. It has 8 core and 16 thread. You lucky to build at the right time.
