So I finally built my first computer. Thanks to everyone that helped make it possible and the advice i've gotten on here has been awesome so far.

My issue now is that i've got a TP-Link WND4800, I made sure that I had all the drivers updated for the card itself and for Windows 10, but my latency/ping and my jitter on the connection are all over the place. I did not have this issue on my previous computer which was an older pre-built system. The new computer is in the exact same location as the previous one.

Any advice to troubleshoot this issue would be much appreciated.

If you are using the 3 ant. that came with the card AND the back of system case is cluttered with cables, each of those cables, when powered, emit Radio Waves that interfere with the WiFi signal. These add up to a signal degradation and cause a slower data transfer. This can still be the case even if you show a strong signal.

What do you show for "Speed:" in the General tab from the connected device in the Windows Network and Sharing Center?

Additionally, you can disable IPv6 in the devices Properties, this can help, in general, with connectivity issues.

So i'm actually considering returning the card that I have, and purchasing one with a different antenna to hopefully get better reception. With the computer needing to stay under the desk can you recommend a different PCIe adapter?
