First PC build. Need help with the PSU cables.

So this PSU is fully modular and I already made sure it works properly. I just would like to know which cables are not necessary right now and if I can leave them out. If so which ones. This is all my parts

You will need to use the 24 pin motherboard cable, one 8 pin for the CPU (I would use "CPU 1" on the PSU) which attaches at the top left of the motherboard. Two 8 pin VGA cables will be needed ( you have 4 total VGA connections on your PSU) for your GPU. Finally, you will need to provide power to your drives...EVGA usually provides a multi-tap power cable for this purpose so you may be able to power both of your drives from only one SATA power connection to the PSU. So total, 5 cables: 24 pin, 8 pin CPU, 2 x 8 pin VGA, and probably 1 SATA power.
