What kind of serious 'editing'? If you had said 'just gaming' I would have said 8GB is all you need. Some editing programs (audio, picture, video, cad, etc.) will use your 16GB's.
I think it's better to spend the extra $25 and get 16GB's. Check your MB specs to see what it can handle. Many good, new MB's can handle 4x8GB sticks. If that's the case with yours get 2x8GB's now so you can upgrade in the future.
