Would this PC spec be able to run high end graphics at 60fps?
How much longevity does it have over the next few years?
what would you tweak without increasing the price too much?

How much are you spending for all those items listed?

The i5-7600 is a 7th-gen Kaby Lake CPU, requiring Windows 10 OS. So, if you don't have Win10, you have to purchase that as well. The motherboard is H110 that supports 6th-gen Skylake CPU out-of-the-box and will need a BIOS update to work with 7th-gen Kaby Lake CPU's. Either you get a B250 motherboard to eliminate compatibility/BIOS update issues or you change your CPU to a 6th-gen Skylake, such as the i5-6600 or i5-6500.

Better if you get a 8GB (2 x 4GB) to take advantage of dual channel memory. If you plan to upgrade to 16GB with that single 1 x 8GB RAM you listed, you might (or might not) encounter compatibility/pairing issues since the RAMs were not tested as a pair.

What is your case? Make sure it fits the 159-160mm tall Hyper 212 CPU Cooler. Note that if you get the locked i5's, it comes with a Stock Intel CPU Cooler (which may suffice in controlling temps if you don't care about aesthetics and noise). The aftermarket cooler is optional if you have a budget to spare.

What is your current PSU? Would it be enough to power your listed parts?

So yes I am planning to install Windows from a USB after the machine is built
I'm ordering the PC so do you think they will deal with the BIOS issues? if not i can change to a Skylake
Your suggestion of 2xGB RAM is useful and I will do this, would you recommend getting Corsair Ram or is DDR4 fine?
I will probably go for an additional cooler to be sure.
This build is looking at around £750

Don't get the 212 evo, it's not needed for a locked CPU and there are better options these days.
