Like the title says i am curious about this topic. I first wanted to pair the i5 with the GTX 1070 but after the massive price drop of the 1080's i changed my mind. Will the i5 bottleneck the GTX 1080 and if yes, which CPU should i then take? I have a H270 motherboard.

There are some games in which a modern i5 will not consistently stay above 60fps. It's not really a matter of bottlenecking, i5's just aren't quite fast enough for that. Whether you'll be happy with one will depend on your expectations.
