Hi , i recently bought a 360 radiator with 3 fans , but i can't seem to install one of them because the motherboard's northbridge heatsink is kinda massive and won't let me . i actually have the biggest case around , the Cooler Master cosmos II , but still it seems like it's too small to either install a 360 radiator in it or have all three fans installed properly .. if your answer is no , then is it safe to run a radiator like that with only 2 fans ? like in games where it gets really hot and starts working

Saw off part of the plastic? Not sure what part of the plastic you want to saw off. I'd have see a pic of what you want to cut before I can give you an answer.

As for running 2 fans on the 360 rad, it depends what you are trying to cool, if its only the CPU, you should be alright with 2 fans, But if you are cooling 2 graphics cards, and the CPU, you might be alright, I'd personally try it first and watch temps under load.
