4th option, I would game off the iGPU of the 7700 as its much better then a old outdated dedicated GPU. With the extra cores/threads will help imensely for video editing/rendering or even streaming.
Let me start off by saying it's too late now and Minecraft is dead. You don't need to spend so much money on an editing software. The PSU Could get bumped up to 600W or so just incase if you haven't bought your parts yet.

As you can see gaming off the HD 630 graphics is more then playable for Minecraft. Another option if your playing other games is to get the G4560 (similar to i3-6100) and a RX 470 which would be a great budget combo for newer games.
ok so the second build with the pentium would be good for minecraft with what fps do you say

Either build would be good but if your playing other games besides Minecraft then I'dgo with the Pentium build. If just Minecraft then the i7 build is good. The i7700 (non K) does come with a cooler however you may want to invest into a decent aftermarket cooler. Try it first with the stock cooler and if temps start exceeding 80C then get a better cooler such as the EVO 212 or something similar.
