I've been the system administrator (if you can even call it that) at my church. My setup is pretty simple, a TL-R600VPN router dishing out IP adresses, and a panoply of other wireless routers (various models) serving as APs throughout the building.
The network is used for internet access, wireless printing, some AV equipment, etc.

The problem is when I try to allow guests into the equation :??:

I can't for the life of me figure out how to set up a dedicated guest network. I know I need to use VLANs, (I can figure that out, no need to explain), but what hardware do I need? Can I just patch into my existing routers with some Ubiquiti APs and get a central VLAN router and be done with it?

Help!!

I would recommend getting a business router that can have one set of DHCP for the staff and a separate DHCP range for the guests. Two separate LAN ports on the router. Since you mentioned Ubiquiti, the EdgeRouter Lite should be able to handle that. An EdgeRouter POE would allow you to power your APs.
