Solution
If you're planning to run two 1440p (2K) monitors off from it and you're worried if GTX 1080 can handle it, go for GTX 1080 Ti instead.

GTX 1080 Ti costs $699 when bought directly from Nvidia,

Oh, if you have the money, go for 32GB of RAM (2x 16GB). 32GB of RAM will help you more in your rendering work than 16GB.

For extra storage, you can go for 3TB Hitachi HDD rather than 1TB WD HDD,
pcpp: http://pcpartpicker.com/products/internal-hard-drive/#S=2500000,10000000&t=7200&m=19&sort=a10&page=1

Other than that, build looks good.

You also might want to consider going with R7 1800X rather than R7 1700 for little bit extra performance,
