The 2 monitors will be for productivity? What does that mean? Does that mean the entire PC will be used for some kind of productivity? Video editing? Music production? CAD? Rendering? I'd look to the Ryzen 1700x if productivity is on the top of your wish list. The problem I have with that is the 1080 Ti. That screams gamer imo. But then the 32GB of RAM moves back over to productivity.

Then I see a third monitor and I just get more confused.

I'd replace that PSU with https://www.newegg.com/Product/Product.aspx?Item=9SIA2F85314119 with such a high end build under its control. Make sure to register all your products. The 10 year warranty that comes with that PSU is worth a stop over at EVGA.

u could consider thermaltake core v71 case along with swiftech h320 x2 cpu cooler and swiftech komodo water block for 1080ti.
and yes, go with the evga g3 psu.
go for corsair vengence led rams for RBG !!!
keyboard - consider logitech g910 spark with g502 mouse?
go for the asus strix 270 e gaming mobo with mystic aura led and ditch the wifi card.
upvote on the 500gb ssd/2tb hdd combo

I would recommend against the founders edition in a reasonably well ventilated case. They are louder and hotter than aftermarket cards.

You will not be able to game across three 4k screens with a 1080ti. You can do one screen very well - an ultra wide 4k possibly.
