I have an intel core i7 2600, gtx 550 ti, 2x 4gb ram on an intel H61MA-D2V powered by a 500W psu. I'd like to upgrade my gpu to a 1060 3gb. Right now I am playing Witcher 3 and it's a reason for my upgrade. I don't play a lot of triple a games but around 3 a year and I'm wondering will upgrading only my gpu will be enough or do I have to upgrade something else aswell.

If you don't have the $ for a whole new system, a 1060 or rx 480 would be a huge upgrade from that 550ti. The cpu might hold the gpu back in some situations but it should still be a significant upgrade.
Plus, when you get more cash you can carry the gpu forward to a new build.
Don't think I would settle for the 3GB vram version tho.
