I have a few old ADSL modem routers laying around that I'd like to use as wireless APs on my home network.

Unfortunately, they don't have a WAN port, only 4 Ethernet ports and a Phone Jack port for Internet.

Can I assign a WAN functionality on one of my 4 lan ports to share Internet through an Ethernet cable or do I need to use a Wi-Fi router for that purpose?

No you cannot do it with ADSL modems, and yes you can use a wireless router to set up an access point. It can either be attached to one of the four LAN ports or to a switch that is attached to one of them.
