Which cpu to get? i5 or i7

we cannot give you a solid advice without know the full purpose of the system, however the i7 7700 no k is worth it above all.

if your just gaming go with at least an I5 6500. if you plan on streaming and doing video editing then the I7 is the way to go

I would not buy a 7600K. The 7700 non-K ends up cheaper overall once you consider motherboard and cooler costs, and is usually faster. The choices that make sense are:
-i5 7500 - good value, "good enough" for most
-i7 7700 - good value, good choice for people who want to stream or have monitors with refresh rates above 60hz
-i7 7700K - not a good value, but the performance is unrivaled
I would not recommend an H100i v2. AiO watercoolers generally cost a lot more than their equivalent-in-performance tower coolers. The Noctua D14 and D15 generally perform the same at a lower price with less noise.
If you get a non-K CPU, either use the stock cooler or grab something inexpensive like the $20 Cryorig M9i, anything higher and you're wasting money. For the 7700K, a $35 Cryorig H7 is a great value cooler and will get you 98% of the clockspeed something more expensive like a D15 or even custom watercooling loop will get you.

There is a difference, but RYZEN is still great in gaming.
I would take the R5 1600 over the i5-7600k every time. It's easy to make an Intel i5 peg at 100% and bottleneck, It's not that easy with an R5 1600. 4 threads vs 12 threads.

If you go with a 7700 non-K (saves $30-50), you don't need a cooler (saves $50-150) and you can go with a B250 or H270 motherboard instead of Z270 (saves $30-50). Overall the 7700 non-K system can be over $200 cheaper, which is enough to move up from a 480 to something like a GTX 1070 - a much faster GPU, which will provide a far better experience in games.
