I want to build a decent PC less than $500 and will run games like BF1 with mixed (high, med., and ultra) settings 1080p. I found 2 GPU that are pretty capable of doing this. I'm not too sure though about the 1060 as it might be bottlenecked by the Pentium. Any feedback would be useful :)

Solution
Don't go for the GTX 1060 3GB, try to get the GTX 1060 6GB or the RX 580 8GB even if it means waiting for some more time for the PC. Or if you don't want to wait, go for the RX 570 4GB or RX 470 4GB (RX 470, if found cheaper than the RX 570) because you'll really benefit from that 1GB extra VRAM of the RX 570/470 4GB over the GTX 1060 3GB. As for the Pentium G4560, it will not bottleneck the GTX 1060 3GB/6GB and also the RX 570/470 4GB and RX 580 8GB.
I have experience with both GTX-Cards (GTX 1050Ti 4GB) and RX-Cards (RX 570 4GB) and according to me, you should go for the RX 570.

Some things you should know!
*The RX 570 can be found in a 8GB Variant but the difference in price from the RX 580 8GB is not much.
*If you can find great...

*If you can find great deals on RX 470s and 480s, go for them without thinking much. (Under $150 is a steal deal for 'em)
*All the RX 570/580 and RX 470/480 cards are based upon a 256-bit architecture while all the GTX 1060 cards are based upon a 192-bit architecture.
*The RX-Cards Drivers are a pain while that of the GTX-Cards are really easy when compared.
