Since a few days ago, the 1080p 60fps option on youtube disappeared, and the best quality available is either 720p 60fps or 1080p normal (which isn't available on 60 fps videos). Hs this happened to others too and is there any way to fix this? (I'm on a galaxy s5)

Where are you trying to watch the videos? Are you using the Youtube app? Sometimes app updates may remove or change some settings/options. You may have also enabled a settings that conserves bandwidth. 1080p 60 fps consumes a lot of data and you aren't going to see the difference on a small smartphone screen anyway.
