A reliable, high-wattage flex power supply?

Hey, guys just made an account to see if I could get some answers for the questions that I have on the future build I will be doing. I need to find a Flex PSU *Must be a Flex PSU* that is reliable and has good wattage unless 400 watts is all that is need for a 7700k or similar CPU (still haven't decided exactly) with a GTX 1080 Zotac Mini. I have seen a bunch of no name brand but nothing really pops out at me with quality that isn't $300 which is insane. I don't think a 500 watt PSU exists so I might have to under volt my components. If people think that some of the brands are reliable enough that they won't bring down my entire system when they croak then I'll go with it, but I have this superstition that if I haven't heard of it, it's probably for a reason.

I have found this 'SeaSonic SS-500L1U 500W Single Server Power Supply - 80PLUS Gold - OEM' it supposedly has 500 watts, is modular, and is by a company I have heard of before. Do you think will work better or just as well as the Athena Power one? Modular will also help conserve the little space the case has.

I won't be overclocking my PC unless I have overhead, and possibly not even then because currently I have bad experiences when I overclock my GPU. I will however be undervolting at stock MHz to keep good thermals.
