I will be using a 100hz ultrawide and also 4k 144 hz(upcoming by asus and acer) monitors. I will buy the latest graphics card which will be in the market at that time. My question is should I buy a single custom high end graphic card or should i buy 2 of those. Will the difference be a large and how will i be able to keep both gpu cool without custom water cooling

Unless you know what you are doing, I wouldn't recommend water cooling blocks on the GPUs. However, you are thinking of the 1080 Ti. Are you going to have the same size monitors? Are you going to play on both screens? I wouldn't recommend it since it will be giving difference frequences. Sticking with the 144hz is probably your best bet.

My recommendation? GTX 1080 Ti will give you the best performance and you should only need 1. Now, if you had 3 4K monitors, then probably an SLI will better.

go for a single 1080 ti. Obviously, two of them is better, but generally some games have little issues with this, which may or may not happen. If you are using two monitors at once, go for two separate cards. some people have sli bridge errors in games, some don't, but i wouldn't risk it and also, one graphics card means you can get a lower watt power supply, by a long way.
The 1080ti was designed for max settings 4k.
it is better than the titan
