Which one should I buy

Which one shoukd i buy? Rx 470 4GB (180€) or Rx 480 4GB (200€) or Gtx 1060 3 GB (230€)
Will be 3 GB of VRAM enough for gaming in next 2 years?

In a normal situation, I'd say 1060, hands down. But, like the case with the 1050 Ti, even though it's a weaker card by comparison, sometimes it will outperform the 1060 3gb just because it has 1gb more frame buffer. However, the 480, along with the rest of the 400 series, doesn't do a good job of fully utilizing its potential, and is generally weaker in most aspects (granted, places where DX12 is in effect, it will shine alright). So, in this sense, it's between the 480 and 1060. My money goes to the 1060. :)

I disagree, the RX 480 4GB is a no brainier imo considering it's cheaper... @OP is the RX 500 series not available in your area?

As for your 3GB VRAM question, it depends on the Resolution mostly, 3GB is starting to slide the edges on 1080p but if you are running 720p or so it should cut it for the next 2 years. 4GB is for sure the sweet spot for 1080p right now and should remain so for a few years. But either way the RX 480 4GB is the best choice for you from that list. This question is asked all the time with the RX 480 almost always being the choice over the 3GB 1060. Only situation i would recommend the 3GB 1060 over it would be a very limited PSU or a distinct need for CUDA. Here are some other threads on this you might want to read up on:

All rx 500 series are available in my area. Should i pick one of these?

Depends what the pricing is like. If you can find an RX 580 around 230€ or less than that would be a beastly card, the RX 570 is also something to consider since according to Digital Foundry's testing, with a bit of Overclocking it can match an RX 480's performance in most games making it a nice budget card. I'd avoid the 3GB 1060 as you would have seen in above threads reasons such as the low VRAM and the fact that it has been watered-down from the original 1060 6GB. That said, if you can find any 1060 6GB around your budget they would be a good card as well. Generally:

RX 580 > GTX 1060 6GB = RX 480 (8GB) > RX 480 4GB > RX 570 = GTX 1060 3GB > RX 470 > GTX 1050 Ti
(At stock clocks)

I can take rx 580 4 GB for 230€ and 8GB for 254€ is 4GB enough? BTW: i will pair it with G4560

4GB will be plenty, that's a good price for the card. 8GB is obviously better in the long term but in 1080p i'd probably stick with the 4GB for the money, should be a couple years yet before more than 4GB is readily needed in 1080p (and i'm currently Gaming in 1080p on an 8GB card, only 1 game has ever gone well over 4GB thus far because it's unoptimized - Star Citizen).

As for your CPU, i would say the RX 580 / 1060 6GB are the bleeding edge of what your CPU can handle before any major bottlenecking occurs, so they will basically be the maximum performance you can get without a new CPU. Good thing is if you do chuck in an i5 or something later down the track you can re-use your Motherboard and RAM and will have a Graphics Card that is capable of running well with a stronger CPU like an i5/i7.
