Short answer: USB-C is slim enough to fit their ultrathin design. Lightning is just far too thick for it.

Long answer:
This is because Apple decided to make a slimmer and lighter design. (despite an improved battery life) Hence there is not enough space to put the Lightning port. The USB-C port is slimmer and hence they used it, at a performance cost.

If you want utmost performance from Apple, I recommend the Macbook Pro 15 (2017 touchbar) with i7 7700HQ.(7920HQ if you can afford). For a balance, the i7 7567U offers great single thread performance which may make up for the 7700HQ in the 13 inch Macbook Pro 2017.

I would not recommend the Intel Core M series; they are too lowly clocked and at times lose to the A10 Typhoon cores in the iPhone 7. Unless you want the longest battery life and portability, go for the Retina Macbook 12".
