My resting CPU temp just jumped from about 25 degrees C to 40 degrees C. I'm constantly running virus checks with Norton so hopefully it's not a virus. My PC is only about a year old. I'm using an H80i V2 with an i5 6600k.

Solution
The problem with AIO coolers is that they can clog and fail in other ways. Check to see if the radiator is exhausting hot air, touch the pump and hoses to see if they are hot.

Thermal paste can also dry out but one year doesn't seem long enough for this to happen. If your AIO seems okay then first thing to do is to re-seat the pump on the CPU.
