So wich one would be better? I'm thinking about 2 480s because many monitors use free sync but g-sync is more expensive.

Yeah imo if you have waited this long you might as well try last a little longer for Vega to drop (hopefully soon) ;)

If not, i agree 1x GTX 1070 > 2x RX 480 in most cases simply due to Crossfire/SLI scaling being pretty poor on some games and non-existent in others. But that said....for the price of 2x RX 480 you should be looking at 1x GTX 1080 prices? Either way i understand the FreeSync statement, is a shame G-Sync has a hefty premium but i wouldn't say it's worth the hassle of multi-GPU just for it.

I always recommend you get the fastest single card you can afford. Support for Crossfire (and SLI) is patchy and multi GPU setups can be very frustrating when a game you really like doesn't support it and you're left with the performance of a single 580.

It is a shame that AMD hasn't shown their hand yet and released a GPU to really compete in the top range.

Well vega is rumored to be as good as a 1070 or 1080

I wouldn't really call that showing their hand. When I can read reviews with actual benchmarks or better yet walk into a store and buy one I can make a judgement on them, until then it is speculation.

I really hope they give Nvidia a headache, choice can only be a good thing for the market.

2x 480s would only make sense if you already have a 480. You may bet better performance on the 2x480 setup for some games but that would be offset by some games not having any crossfire support. And if you do not have a 4k monitor then just one RX 580 or GTX 1060 would be fine for 1080p gaming. At 1080p something like the 1070 is not giving you more than better benchmarks with no real world improvements to your experience.
