You wont need that high speed RAM as it has little to no impact on Intel CPUs. So you should get some slower speed RAM and use the money saved on storage as you did not have any HDD or SSD on your list. For the options that you have, it would be foolish not to go with an SSD. They are light years ahead of HDD.

I would go with the EVGA SC 1080 because they are good cards at a good price point. I would not spend much more than this on a 1080, as if you go much higher you might as well go for a 1080ti. With that being said, pending on your resolution, the gtx 1080 will get you 1080p or 1440p will have no issues getting 60+ fps on any game you play.

You could back down on the PSU if you want to save some money, 750w is more than...

You could back down on the PSU if you want to save some money, 750w is more than ample amount. However, don't go too cheap on a PSU, as a malfunction will cost you in the long run. The only manufacturers I would buy from are EVGA, Corsiar, or Seasonic. The GPU you selected is a good PSU, so if your happy with the price, then roll with it.

Here is what I would recommend:

CPU: Intel - Core i7-7700K 4.2GHz Quad-Core Processor ($337.00 @ Amazon)
CPU Cooler: Cooler Master - Hyper 212 EVO 82.9 CFM Sleeve Bearing CPU Cooler ($24.99 @ Amazon)
Motherboard: Asus - STRIX Z270-E GAMING ATX LGA1151 Motherboard ($203.98 @ Newegg)
Memory: G.Skill - Ripjaws V Series 16GB (2 x 8GB) DDR4-2666 Memory ($103.99 @ Newegg)
Storage: Samsung - 960 EVO 500GB M.2-2280 Solid State Drive
Video Card: EVGA - GeForce GTX 1080 8GB Superclocked Gaming ACX 3.0 Video Card ($514.98 @ Newegg)
Power Supply: EVGA - SuperNOVA NEX 750W 80+ Gold Certified Fully-Modular ATX Power Supply ($89.99 @ Amazon)
